THE PRESENT STATE AND PROBLEMS OF FOOD SERVICE BY THE COVERED WAGON BAR

Abstract
In accordance with the rapidly growing number of street food services without a license, a study was undertaken to determine the present state of food service by the covered, wagon bar; why customers consume foods away from home; and why they prefer this type of food service; through an investigation in the Youido dong of Seoul; "between October and November of 1987. The study was comprised of three parts: 1) A survey of covered wagon food service operation, 2) A survey; of personal and food handling hygiene, 3) ¢¥A survey of customers¢¥ behavior. The survey found a total of 68 covered wagon bars, consisting of 33.8/ snack bars and 66.2% drink-and-food bars, operating in this islet. ¢¥, The most popular foods for snack items were rolled rice,*`noodle soup, spicy sweet rice noodles, and fried cuttlefish; the most popular alcoholic-,drinks were Soju, beer, and thick rice ¢¥,wine, in that order. The highest consumption of food among the customers of the drink-food-bars was of raw cuttlefish and sea eels. Survey results show covered wagon bars to be more popular among persons in their twenties or thirties than among teens or the elderly; also, among males than females; among company employees_ and students than others _The study indicated the majority of customers consumed these foods with worries about food, 4yglene. However, they prefer the casual and popular atmosphere at the counter of the -covered wagon bar. The survey found many problems of hygiene, in method of food purchasing, menu planning, food preparation, dish washing, treatment of leftovers, and water supply, as well as personal hygiene. Finally, the study emphasizes a need for better operation of covered wagon bar, improvement of foodstuff handling and the way of food services, and personal hygiene. Short:-training of food hygiene and nutrition to the operators who were responsible to this ¢¥type of food services, and a change of the license system are urgently needed for better quality food services of covered wagon bars.
